This unique soil, plus a perfect weather, provide its distinctive flavors and aromas. The finest +6 years old agave is carefully hand selected by the Infinito experts jimadores. SLOW COOKING The agave pias are naturally steam based cooked for 12 hours in a stainless steel autoclave. We use from 7 to 8 kilograms of agave
