Deep red and striped, with yellow flesh, keeps its shape well when cooked and good for dried apple rings. Stores until January. Very pretty blossom and a good cropper. Legend has it that Hogg came across the apple at one of the Woolhope Club meetings and suggested the name, recognising the similarity with the Norfolk Beefing. He later found out that Forsyth had also mentioned a Herefordshire Beefing which he
